HELP! I am trying to come up with a staff incentive program for a pub. Any Ideas?

I am the manager of a pub/bar and I need some ways in motivating my staff. I am tierd of giving away a bottle of wine etc. If anyone has some ideas on how I can run a team staff incentive. This way they would work together. Also if I ran the contest over a few months I could give away a really great prize. Like a digital camera etc. I need some way of keeping score. Help!

I have worked for a service industry for years even though it was a law firm it was still about getting the clients. One thing we did was every summer we had a contest, whoever had the most sales or percentages of sales, would get a weekend at a resort in Branson. It was a great idea and since we all broke all kinds of records one year we all got to go. But you could do a suite in a nice hotel. Work in coordination with the hotel and put that nice bottle of wine in the hotel room and maybe kick in an hour massage for your employee or one room service meal delivered. There is nothing better than paid time off plus getting to go on a vacation even if it’s in your own hometown. There is something about a hotel room that says “relax, have a great time, on us- Thanks for a job well done!”
We did a tic-tac-toe game at a place I used to work at. It’s great if you want the servers to try selling a variety of items. If you are just looking for better prizes to give away, stuff like digital cameras is nice, but, honestly, that’s not that big of a deal. Offer them a unique prize, like a weekend hotel stay in a nearby city, or mini refrigerator stocked with every flavor of stoli vodka.
I’ll be honest with you, though. All these games and contests and stuff are great, but the bottom line is that you still have to have a waitstaff that cares enough to try.
If the problem seems to be more of a motivational issue with your staff, the best thing you can do is go out of your way to educate them about everything that you sell. Have them try all the beers, wines, menu items, etc. The more they know about the products, the better they will feel about the job they are doing.
It may cost you a few bucks up front, but the more pride your staff has in the pub, the more money you will make in the long run.
Of course the solution may not be this simple, but there’s only so much I can suggest knowing nothing specific about your situation. I only know what I have seen work in the past.
Is there a business close by you could be in competition with for some event? Say the business, for example, that raises the most money for a charity. Not only would this make your team pull together but would be good for your business. It doesn’t have to be that particular thing. Merely a suggestion.
The first thing you need to decide is what you are trying to reinforce? The second thing you need to do is to decide how you’re going to measure any related improvement. Are you trying to improve sales or customer service? Then you have to decide what factors your staff has control over; e.g., you can’t expect sales from 2pm to 5pm to equal 5pm to 8pm, so some things might have to be weighted differently. Next, you have to decide how to measure one or more of those factors. Sales would be easier, since you are dealing with absolute numbers. Custormer service would be difficult, because it is a subjective value. I can’t think of any way except for some kind of customer evaluation form. Unfortunately, customers don’t like to fill them out. So, if you do that make it extremely simple.
